Ingredients

  • 1/2 cup zesty Italian dressing
  • 4 boneless, skinless chicken breasts, cut into strips
  • 2 cups broccoli florets
  • 2 cups Minute® Brown Rice
  • 1 1/4 cup low sodium chicken broth
  • 1 1/2 cups chopped tomato
  • 1 cup shredded Cheddar cheese
  • 1/2 cup sliced green onion

Instructions

  • Loaded with chicken, rice, melty Cheddar and zesty Italian flavors, this hearty and delicious one-skillet meal is sure to please even the pickiest of eaters.

    Step 1

  • Heat dressing in a large, nonstick skillet over medium-high heat. Add chicken and cook for 2 minutes, stirring frequently.

    Step 2

  • Stir in broccoli, rice and broth. Bring to a boil; cover.

    Step 3

  • Reduce heat to low; simmer for 10 minutes, or until chicken is cooked through and rice is tender.

    Step 4

  • Let stand, covered, for 5 minutes, or until liquid is absorbed.

    Step 5

  • Add tomatoes, cheese and green onions; Stir until blended.
