Step 1
Preheat oven to 400˚F. Prepare rice according to package directions. Transfer to greased 8 x 8-inch baking dish.

Meanwhile, stir together cream cheese and hot sauce in a medium bowl. Add cauliflower, Cheddar, salt and pepper and toss to combine. Spoon over rice. Sprinkle with blue cheese.
Step 3
Bake for 25-30 minutes, until golden brown and bubbly. Sprinkle with green onions.
Substitute goat cheese or feta for blue cheese, if desired.
