Ingredients

  • 1 cup Minute® Ready to Serve Brown & Wild Rice
  • 1/2 tbsp olive oil
  • 1 egg
  • 1 cup spinach, chopped
  • 1/2 avocado, sliced
  • 1 tbsp everything seasoning

Instructions

  • If you’re craving a hearty breakfast first thing in the morning, this Brown Rice and Egg Breakfast Bowl with Spinach is delicious and satisfying, not to mention easy to make.

    Step 1

  • Heat rice according to package directions. 

    Step 2

  • In a medium pan, heat oil. Add the egg and spinach to the pan. Scramble the eggs for 1 minute or until cooked to desired doneness. 

    Step 3

  • Add rice and egg scramble to a bowl and combine. Top with sliced avocado and everything seasoning.
