Step 1
Heat rice according to package directions.
Step 2
Scoop 1/2-inch round balls of stuffing onto a microwave-safe dish. Microwave on HIGH for 45-60 secs, or until heated through; set aside.
Step 3
Stir together water, turkey, gravy and vegetables in a microwave-safe bowl. Cover with plastic wrap, pulling back a small area for venting. Microwave on HIGH, stirring once during the cooking, for 60-90 secs, or until boiling and heated through.
Step 4
Stir rice into soup and top with stuffing dumplings.
Substitute water with turkey broth or chicken broth, if preferred.
Substitute leftover turkey dinner vegetables with frozen vegetables, if needed.
