Ingredients

  • 1 cup Minute® Jasmine Rice
  • 2 tbsp canola oil
  • 1/2 lb sliced mushrooms
  • 1 bag (14 oz) shredded coleslaw mix
  • 4 green onions, thinly sliced
  • 2 eggs, beaten
  • 1/3 cup teriyaki sauce

Instructions

  • From start to finish, this delicious recipe takes just 20 minutes to make. Try our Teriyaki Mushroom Fried Rice for a flavorful, Asian-inspired weeknight dinner!

    Step 1

  • Prepare rice according to package directions. Cool for 5 minutes.

    Step 2

  • Meanwhile, heat oil in a large skillet or wok set over high heat. Add mushrooms and cook for 3-5 minutes, until they start to brown.

    Step 3

  • Stir in coleslaw mix and green onions. Cook for 2-3 minutes, or until vegetables start to soften. Stir in eggs and cook for an additional 2-3 minutes, or until soft curds start to form.

    Step 4

  • Stir in rice and teriyaki sauce. Cook until well coated and heated through, about 3 minutes.
