Step 1
Combine cream, milk and salt in a medium saucepan; bring to a boil, stirring often. Stir in rice and jam.
Step 2
Reduce heat to medium-low; cook, stirring constantly, for 8 minutes, or until rice is tender and mixture starts to thicken. Stir in frozen berries and sugar; return to a boil. Remove from heat.
Step 3
Beat egg yolks in a medium bowl. Gradually whisk 1/2 cup hot rice mixture into yolks.
Step 4
Slowly stir egg mixture back into hot rice mixture. Add vanilla; cook over low heat, stirring constantly, for about 2 minutes, or until thickened. Allow pudding to cool for 15 minutes.
Step 5
Serve pudding sprinkled with granola.

If you prefer to serve this rice pudding crumble cold, simply cover and refrigerate for 1-2 hours, until chilled.
Top each serving with a dollop of whipped cream or ice cream, if desired.
