Step 1
Heat rice according to package directions.
Step 2
Place kale in a medium-sized bowl and top with rice, salmon, celery, cucumber and Sriracha. Garnish with cilantro and peanuts, if using.
Step 3
Serve immediately with lemon wedge, if using.
To pack ahead and serve this dish hot, assemble the ingredients except for the rice in an airtight container and refrigerate until ready to eat. Microwave the rice just before serving and stir together for a hassle free, warm rice meal in less than 5 minutes.
