Step 1
Preheat oven to 400°F.

Coat a 12-cup muffin pan with nonstick cooking spray.

Combine baking mix, cheese, quinoa (unheated), sausage and milk together in a large mixing bowl. Blend well.
Step 4
Fill each prepared muffin cup 3/4 full with batter.
Step 5
Bake for 20 to 25 minutes, or until tops are lightly browned. Transfer muffins to a wire rack to cool slightly before serving. Serve warm.
Store leftovers in an airtight container in the refrigerator for 3-4 days. Muffins can also be stored in the freezer. To reheat, microwave on HIGH for 30-45 seconds, until warm.
For bite-sized muffins, use 2 mini muffin pans and decrease cook time to 12-15 minutes.
