Ingredients

  • 1 Minute® Long Grain & Wild Rice Cup
  • 1 whole cauliflower head, stems trimmed to sit flat
  • 3 tbsp olive oil, divided
  • 2 tbsp salt
  • ¼ cup crispy chickpeas

Instructions

  • Step 1

  • In a large pot, place the cauliflower inside. Fill with water until fully submerged. Remove cauliflower and bring water to a boil. Return the cauliflower to boiling water and boil for 15 minutes or until a fork can be inserted smoothly.

    Step 2

  • Preheat oven to 500F. Remove cauliflower and allow to cool for 30 minutes. Once cooled, brush 1 tbsp of olive oil over the entire head as well as in reachable crevasses. Then sprinkle salt all over. 

    Step 3

  • Place on a parchment paper lined baking sheet. Cook for 35 minutes or until completely roasted.

    Step 4

  • Heat rice according to package directions.

    Step 5

  • Drizzle the remaining olive oil over the top and serve on top of the rice and add crispy chickpeas. Can be served in steaks, florets or as a communal dish.
