This refreshing and light rice salad combines fragrant Minute® Instant Jasmine Rice, fresh herbs, leafy arugula and zesty feta cheese into one impressive dish.
Step 1
Prepare rice according to package directions. Allow to cool completely.
Step 2
Whisk together oil, vinegar, mustard, garlic, salt and pepper in a large bowl. Add rice, dill and mint and toss gently to combine.
Step 3
Stir arugula, peas and feta into salad.
Recipe Tip
Substitute goat cheese for the feta cheese, and use spinach in place of the arugula, if desired.
