Ingredients

  • 1 cup Minute® Ready to Serve Brown Rice & Quinoa
  • 1/3 cup black beans
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 1 green onion, thinly sliced
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1/2 tbsp fresh lime juice
  • 1 tbsp chopped fresh mint leaves

Instructions

  • If you like the minty sweetness of mojitos, you’ll love the tangy, refreshing taste of our Cuban Mojito Quinoa Salad. Loaded with fresh veggies, it’s bursting with vibrant colors and flavors!

    Step 1

  • Heat rice and quinoa according to package directions.

    Step 2

  • Combine rice and quinoa, beans, green bell pepper, red bell pepper and green onions in a medium bowl. Stir to combine.

    Step 3

  • Whisk together vinegar, honey, olive oil and lime juice in a small bowl. Add mint.

    Step 4

  • Pour dressing over rice and quinoa mixture and toss well.
