Ingredients

  • 1 cup coconut milk, divided
  • 1/2 cup coconut water
  • 2 tbsp sugar
  • 1 cup Minute® Jasmine Rice
  • 1/4 cup sweetened coconut flakes, toasted
  • 1/2 tbsp fresh lime juice
  • 1 tsp fresh lime zest

Instructions

  • Add a tropical kick to your weeknight dinner by serving Triple Coconut Lime Rice Pudding, made with our fluffy, aromatic, long-grain Minute® Jasmine Rice.

    Step 1

  • In a small saucepan, combine 1/2 cup coconut milk, coconut water and sugar.

    Step 2

  • Bring to a boil. Add rice, stir, cover and remove from heat. Let stand for 5 minutes.

    Step 3

  • Return pan to stovetop and add remaining coconut milk. Bring mixture to a boil. Reduce heat and simmer for 5 minutes. Stir in coconut flakes, lime juice and zest.

This rice pudding dessert is fun for the whole family to prepare. Have one person cut up and juice the fresh limes while another prepares the coconut flakes and another stirs the rice to make sure it stays rich and creamy.

Note: Rice pudding is best cooked with a certain type of rice. Our kitchen chefs have tested and jasmine is the best variety. It is long grain and therefore contains less starch than shorter grain rice. Too much starch will lead to mushy results. Long grain jasmine rice adds a nice flavor to this dish while also helping maintain its rich and creamy texture. For a show-stopper, impress your guests by serving this pudding in coconut-shaped bowls.
