Step 1
Combine pineapple juice with soy sauce. Add enough water to equal 2 cups of liquid. Set aside.

Heat oil in a large skillet over medium-high heat. Add chicken and sauté for 5 minutes, until browned on all sides.

Add asparagus, carrots, mushrooms, garlic and ginger. Continue to cook for 3 minutes, until the internal temperature of the chicken reaches 165°F.
