Ingredients

  • 1 can (20 oz) pineapple chunks, drained, juice reserved
  • 1/2 cup soy sauce
  • 1 tbsp canola oil
  • 6 boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup asparagus, trimmed and sliced into 1-inch pieces
  • 1 cup shredded carrot
  • 1 can (5.5 oz) mushrooms, drained
  • 2 cloves garlic, minced
  • 1 tbsp fresh grated ginger root
  • 2 cups Minute® White Rice
  • 2 eggs, scrambled
  • 1/2 cup thinly sliced green onion
  • 2 tsp toasted sesame seeds

Instructions

  • Dive right into the sweet and savory flavors of this Chinese Stir-Fried Rice and Pineapple dish with vegetables and our Minute® Instant White Rice.

    Step 1

  • Combine pineapple juice with soy sauce. Add enough water to equal 2 cups of liquid. Set aside.

    Step 2

  • Heat oil in a large skillet over medium-high heat. Add chicken and sauté for 5 minutes, until browned on all sides.

    Step 3

  • Add asparagus, carrots, mushrooms, garlic and ginger. Continue to cook for 3 minutes, until the internal temperature of the chicken reaches 165°F.

    Step 4

  • Add pineapple juice mixture to skillet. Stir in rice and pineapple chunks. Bring to a boil, cover and simmer for 5 minutes.

    Step 5

  • Stir in eggs, green onions and sesame seeds.

    Substitute the vegetables with any you have on hand, such as chopped broccoli, sliced cabbage or corn.
