  • 1 cup Minute® Ready to Serve Yellow Rice
  • 2 tbsp balsamic dressing
  • 2 tbsp olive tapenade
  • 1 tsp capers, drained well
  • 1/2 cup halved cherry tomatoes
  • 1/2 cup frozen green beans, thawed
  • 1 can (3 oz) tuna, drained and flaked
  • 1 hard-boiled egg, cut into wedges


  • Quick and easy, this French-style salad is made with rice instead of potatoes. Our Tuna and Rice Niçoise Salad is the perfect recipe for those who love veggies combined with the saltiness of marinated capers. It’s also a refreshing take on a classic.

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Combine rice, balsamic dressing, tapenade and capers in a medium bowl. Mix well.

    Step 3

  • Top with cherry tomatoes, green beans, tuna and hard-boiled egg.

    Serve salad over a bed of mixed greens, if desired.

New Take on Tuna (Salad)

A traditional Niçoise salad, or salade Niçoise, is made with tomatoes, hard-boiled eggs, olives and anchovies or tuna. Typically dressed with olive oil vinaigrette, this light, French-inspired dish makes a well-balanced lunch or the perfect option for a light dinner.

This salad can also contain potatoes and cooked green beans. In this version, we replaced potatoes with our Minute® Ready to Serve Yellow Rice. This rice cup cooks up fast, making it a great alternative and saves you from the chore of washing, peeling and boiling potatoes.

For a unique touch, we use olive tapenade here, instead of the traditional black Niçoise olives. This blended olive paste distributes evenly among the other ingredients, meaning you get a briny bite in every mouthful! Canned tuna mixes here with bursts of capers, hard-boiled eggs, crisp green beans and sweet cherry tomatoes. Tart balsamic vinegar rounds out the recipe, bringing all the flavors together.
