Ingredients

  • 1 cup Minute® Ready to Serve Cilantro & Lime Jasmine Rice
  • 1/2 cup (3 oz) chopped, rotisserie cooked chicken
  • 1/2 cup chicken broth
  • 1/2 cup coconut milk
  • 1 tbsp Thai green curry paste
  • 3 small shiitake mushrooms, thinly sliced
  • 1 green onion, thinly sliced

Instructions

  • Step 1
    Heat rice according to package directions.

    Combine chicken, broth, coconut milk, curry paste and mushrooms in a medium, microwave-safe bowl.

    Microwave on HIGH for 3 minutes. Stir in rice and garnish with green onion.

Curry Suggestions
