Ingredients

  • nonstick cooking spray
  • 1 can (20 oz) pineapple chunks, drained, juice reserved
  • 2 cups Minute® Brown Rice
  • 1/2 cup reduced sodium soy sauce
  • 1 tbsp fresh grated ginger
  • 1 tbsp sesame oil
  • 4 (4 oz each) salmon fillets
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 green onion, thinly sliced (optional)
  • 1 tbsp black sesame seeds (optional)
  • 1 tbsp white sesame seeds (optional)

Instructions

  • Serve the family a dinner everyone will love with this restaurant-style, sweet and tangy salmon and rice dish featuring whole-grain brown rice and juicy pineapple chunks.

    Step 1

  • Preheat oven to 400°F. Line a 9 x 13-inch baking pan with aluminum foil; coat foil with nonstick cooking spray.

    Step 2

  • Chop pineapple chunks, set aside.

    Step 3

  • Prepare rice according to package directions; stir in chopped pineapple.

    Step 4

  • Meanwhile, combine reserved pineapple juice, soy sauce, ginger, and sesame oil in a medium bowl. Place salmon fillets on prepared baking pan.

    Step 5

  • Brush filets with sauce. Bake for 10 minutes, or until cooked to desired doneness.

    Step 6

  • While salmon bakes, combine remaining sauce, cornstarch and water in a small saucepan. Bring to a boil and cook, stirring constantly, until sauce thickens.

    Step 7

  • Reduce heat and simmer for 2 minutes.

    Step 8

  • Serve salmon and sauce over pineapple rice. Garnish with green onions and sesame seeds, if using.
