Ingredients

  • 1 cup Minute® Jasmine Rice
  • 1/4 cup soy sauce
  • 2 tbsp rice wine vinegar
  • 4 tsp sesame oil
  • 1 tbsp minced fresh ginger
  • 2 cloves garlic, minced
  • 1/4 tsp sugar
  • 2 tbsp canola oil
  • 1 cup shredded turkey
  • 1 carrot, diced
  • 6 green onions, thinly sliced, divided
  • 1 cup frozen shelled edamame, thawed
  • 1/2 cup frozen corn, thawed
  • 4 tsp sesame seeds, toasted

Instructions

  • This tasty fried rice is a quick and easy main dish that delivers crowd-pleasing flavors everyone will love. The best part? It’s ready in just 25 minutes!

    Step 1

  • Prepare rice according to package directions. Cool completely.

    Step 2

  • Meanwhile, whisk together soy sauce, vinegar, sesame oil, ginger, garlic and sugar; set aside.

    Step 3

  • Heat oil in a large skillet or wok set over high heat. Add turkey, carrots and half the green onions and cook, stirring occasionally, for 5-7 minutes, or until the turkey starts to brown and the carrots begin to soften.

    Step 4

  • Stir in rice, edamame and corn. Cook for 1-2 minutes, or until well combined. Stir in soy sauce mixture and cook for 3-5 minutes, until rice is heated through and veggies are tender.

    Step 5

  • Garnish with remaining green onions and sesame seeds.

    Recipe Tip

  • If you don’t have leftover turkey on hand, simply substitute it with 1 cup (8 oz) of ground turkey and increase the cook time to 10-15 minutes.
