Ingredients

  • 1 cup Minute®Chicken & Herb Seasoned Rice Cups
  • 1/2 cup fresh green beans, cut diagonally into 1/2 inch pieces
  • 1/2 cup sliced yellow squash
  • 3/4 cup (6 oz) diced cooked chicken breast
  • 2 tbsp herbed vinaigrette

Instructions

  • With just one cup of veggies, one cup of chicken-flavored rice, zesty herbed vinaigrette and diced chicken breast, you can make a complete meal in minutes!

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Combine green beans and squash in a medium, microwave-safe bowl. Microwave on HIGH for 2 minutes.

    Step 3

  • Add rice, chicken and vinaigrette. Microwave on HIGH for an additional 1-2 minutes, until chicken is heated through.

    Recipe Tips

    Use leftover grilled chicken breast or rotisserie chicken in this dish.

    Switch things up by replacing the squash and green beans with other veggies of your choice, such as broccoli, tomato or zucchini.
