Just when you thought rice pudding couldn’t get any better, along comes our Pumpkin Spiced Rice Pudding made with Minute® White Rice.
Rice pudding is always a delicious dessert. Yet, with warm pumpkin pie spices, creamy evaporated milk and just the right amount of sugar, this version just might be our favorite.
Step 1
Combine rice, evaporated milk, pumpkin, water, sugar, pumpkin pie spice and salt in a medium saucepan.
Step 2
Cook over medium heat for 20 minutes, stirring frequently. Remove from heat and stir in vanilla extract. Let stand for 5 to 10 minutes before serving.
For a creamier rice pudding, increase amount of water to 1 1/2 cups. Serve pudding garnished with a dusting of pumpkin pie spice, graham crackers, whipped cream or pecans, if desired.
For a special party treat, spoon pudding into baked mini pie crusts or phyllo shells and top with a little whipped cream!

Sometimes canned pumpkin isn’t easy to find, or the only ones available are packed with extra sugar. If you want a challenge and to freshen up your dessert, buy a pie pumpkin! Roast it down and blend it up in a food processor to get a similar consistency to the canned counterpart. This process is more time consuming, but the flavor will be authentic!
Add a little extra oomph by making your own bourbon whipped cream! A simple but elegant addition, this whipped cream is a delicious and fluffy compliment to the pumpkin spice. Simply grab your stand mixer or a bowl and whisk, heavy cream, confectioners sugar and some bourbon and whip everything together. Top your rice pudding with a spoonful, and serve. This addition does contain alcohol, so keep it away from children!
Canned sweet potatoes are an interesting alternative to pumpkin. When mixed with pumpkin spice and brown sugar, the flavor and consistency are very similar!
If you don’t care for pumpkin, you could replace it with chunky applesauce and cinnamon in this recipe. Bake in the phyllo pastry shells and top with a scoop of vanilla ice cream for a mini apple pie bite.
Canned condensed coconut milk is a good alternative to evaporated dairy milk. If the coconut milk is too thick, mix it with rice milk to thin it out without overpowering the flavor of the pudding.
