Ingredients

  • 1 cup Minute® Ready to Serve Multi-Grain Medley
  • 1 can (6 oz) tuna packed in water, drained
  • 4 cherry tomatoes, halved
  • 4 pitted olives, sliced
  • 2 tbsp red wine vinaigrette
  • 1 cup field greens

Instructions

  • This Provençal Rice Salad is ready to serve in minutes! Combine all of the ingredients for a quick and delicious salad, any time.

    Step 1

  • Heat medley according to package directions.

    Step 2

  • Combine medley, tuna, cherry tomatoes, olives and vinaigrette in a medium-sized bowl.

    Step 3

  • Serve medley mixture over field greens.

French-Style Salad

This rice salad may be fast but it’s a world apart from your typical fast-food option, and has all the components of a well-balanced meal. With only 6 ingredients, this salad comes together in less than 5 minutes. It’s also loaded with flavor and packed with protein from the added tuna and quinoa grains.

Thanks to Minute® Ready to Serve Multi-Grain Medley cups, you can prepare this quick meal anywhere there’s a microwave. If you prefer to eat it cold, simply let the rice cool, then toss in the tuna, chopped tomatoes and olives and mix with the red wine vinaigrette.

Salad Options

Customize this simple rice salad any way you like. If you’re vegetarian, simply omit the tuna and replace it with another veggie of choice, tofu or your favorite type of beans.

Although this is a French-inspired salad, make it your own and use your favorite variety of olives whether black, green or Kalamata. You can even top this salad with feta or goat cheese and some crunchy chopped nuts.

If you’re making this ahead of time, make your own red wine vinaigrette and portion it out for the week. To make it, combine olive oil, red wine vinegar, garlic powder, Dijon mustard, dried Italian seasoning mix, salt and pepper, to taste. Add a bit of honey if you want to make the vinaigrette sweeter. Save the ingredients to make more in the future or make a double batch to keep in your fridge for all your salads throughout the week.
