Ingredients

  • 3/4 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp minced garlic
  • 1 tbsp fresh grated ginger
  • 2 tsp garam masala
  • 1/2 tbsp chili powder
  • 1 tsp salt
  • 1 tsp turmeric
  • 3 boneless chicken thighs, cut into 2-inch pieces
  • 3 tbsp ghee, divided
  • 1 large onion, sliced
  • 1 cup Minute® Jasmine Rice
  • 1 cup water
  • 2 bay leaves
  • 1 cinnamon stick
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped mint
  • 1/3 cup cashew halves

Instructions

  • This delicious, Indian-inspired chicken biryani dish is a savory meal made easy in an Instant Pot. It’s perfect for a busy weeknight or when entertaining. This flavorful recipe was created by Shannon Coe (My Suburban Kitchen), for Minute® Rice.

    Step 1

  • Combine yogurt, lemon juice, garlic, ginger, garam masala, chili powder, salt and turmeric in a medium bowl. Stir well to combine.

    Step 2

  • Add chicken and marinate for 15 minutes.

    Step 3

  • Turn Instant Pot to Sauté mode and add 2 tablespoons of ghee. Once melted, added chicken and sauté for 3-5 minutes. Remove from pot.

    Step 4

  • Add remaining ghee and, once melted, add onion. Cook for 1-2 minutes.

    Step 5

  • Add chicken, rice, water, bay leaves and cinnamon stick to pot. Cover and secure lid. Cook on High for 4 minutes. Let steam naturally release for 10 minutes and then manually release pressure.

    Step 6

  • Stir rice well and remove to a large platter. Top with cilantro, mint and cashews before serving.

    Recipe Tips

    If you prefer, replace chicken thighs with boneless, skinless chicken breasts.

    Ghee is clarified butter and can be found in the international section of your grocery store. Butter can also be substituted for the ghee.

Make sure to cook the chicken completely before adding the Minute® Instant Jasmine Rice. For the best biryani taste, use Greek yogurt for this recipe. Since it is thicker than regular yogurt, Greek yogurt gives the marinade a creamier consistency. Cooking with ghee is another way to ensure a creamy texture, but if you don’t have any on hand, any other cooking oil will do.
