Ingredients

  • 1 cup Minute® Jasmine Rice
  • 2 tbsp canola oil, divided
  • 4 eggs, beaten
  • 2 tbsp sesame oil
  • 1 cup thinly sliced cabbage
  • 1 carrot, diced
  • 2 green onions, thinly sliced
  • 2 cloves garlic, minced
  • 4 tsp minced fresh ginger
  • 1 cup diced rotisserie cooked chicken
  • 1/2 tsp Chinese 5-spice powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp rice wine vinegar
  • 2 tbsp soy sauce
  • 2 tbsp water

Instructions

  • This quick and delicious Chicken Fried Rice recipe is easy to make with the help of Minute® Jasmine Rice. Seasoned to perfection with 5-spice powder, it’s also ready in just five simple steps!

  • Step 1

  • Prepare rice according to package directions. Set aside and allow to cool completely.

    Step 2

  • Meanwhile, heat 1 tablespoon of canola oil in a large, nonstick skillet over medium-high heat. Add eggs and cook, stirring frequently, for 3-5 minutes, until the eggs are scrambled. Transfer to a plate.

    Step 3

  • Wipe the pan clean. Add remaining canola oil and sesame oil while increasing the heat to high. Add the cabbage, carrot, green onion, garlic and ginger. Cook, stirring occasionally, for 2-3 minutes, or until slightly softened.

    Step 4

  • Stir in the rice, chicken, 5-spice powder, salt and pepper. Cook for 3-5 minutes, or until well combined and starting to heat through.

    Step 5

  • Stir in rice vinegar, soy sauce and water. Cover and cook for 3 minutes, until rice is steaming hot. Stir in the scrambled eggs.

Cook your rice beforehand and allow it to cool or use day-old leftover rice for this recipe. When your rice is cool, it holds less moisture which ultimately will help your fried rice be less mushy.
