Step 1
Prepare rice according to package directions. Set aside.

Meanwhile, heat 1 tablespoon of oil in a large skillet over medium heat. Season chicken with salt and pepper and add to pan. Sauté chicken until cooked through, about 5-10 minutes. Set aside.

Turn heat to medium-high and add remaining oil. Add broccoli slaw and carrots to skillet. Sauté until beginning to soften, about 3 minutes.
