Ingredients

  • 1 cup Minute® Instant White Rice
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1/2 cup leeks, white portion only and sliced
  • 1/4 cup frozen peas
  • 1/2 cup parmesan cheese, grated
  • 1/2 tsp salt

Instructions

  • Step 1 

    Prepare rice according to package directions. Replace water with chicken broth. 

    Step 2  

    In a large skillet, heat the olive oil over medium heat. Add the leeks and sauté for 3 minutes or until they are soft and translucent. Add peas with leeks and cook for 2 additional minutes or until peas are cooked through.

    Stir in leeks, peas, parmesan, salt and pepper.
