Ingredients

  • 2 cups Minute® Brown Rice
  • 1 can (14.5 oz) chicken broth
  • 4 slices bacon
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 pkg (6 oz) baby spinach
  • 1 cup shredded Italian cheese blend, divided
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Bacon is delicious at any time of day. Try it for dinner in this Spinach and Bacon Casserole!

    Step 1

  • Preheat oven to 375°F.

    Step 2

  • Prepare rice according to package directions, substituting broth for water.

    Step 3

  • Meanwhile, heat a large sauté pan or deep-sided skillet over medium-high heat. Fry bacon until crisp. Remove from pan and break into small pieces. Set aside.

    Step 4

  • Add onions and garlic to pan and sauté until onions are transparent, about 2 minutes.

    Step 5

  • Stir in rice, condensed soup, spinach and 1/2 cup of cheese. Season with salt and pepper.

    Step 6

  • Spoon mixture into a 2-quart casserole dish. Top with remaining cheese.

    Step 7

  • Bake for 20 minutes, or until golden brown and bubbling.
