Ingredients

  • 2 cups Minute® Brown & Wild Rice Cups
  • 1 can (15.5 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes and green chilies, drained
  • 1/4 cup chopped fresh cilantro leaves (optional)

Instructions

    Step 1

  • Heat rice according to package directions.

    Step 2

  • Combine brown and wild rice, black beans, tomatoes and green chilies in a medium bowl. Stir to combine.

    Step 3

  • Top with cilantro, if using.

    Recipe Tips

    For added flavor, mix 1 tablespoon of olive oil with the juice of half a lime, a pinch of cumin and garlic powder. Season the dressing with salt and pepper and pour over the salad.

    Switch things up by adding canned corn, sliced avocado, crushed tortilla chips, or other favorite mix-ins to the salad before serving.
