Ingredients

  • 1/2 cup (3 oz) seasoned ground beef or sausage
  • 1 cup Minute® Ready to Serve Brown Rice & Quinoa
  • 1 red bell pepper
  • 1 tbsp water
  • 1/4 cup crushed tomatoes, preferably fire-roasted
  • 1/4 cup shredded mozzarella cheese
  • chopped, fresh basil leaves (optional)
  • Parmesan cheese (optional)

Instructions

    Step 1

  • Place ground beef or sausage into a microwave-safe dish. Microwave on HIGH for 2-3 minutes, stirring halfway through, until cooked through and no longer pink. Set aside.

    Step 2

  • Heat rice and quinoa according to package directions.

    Step 3

  • Cut pepper in half vertically and remove top and seeds. Place in a small, microwave-safe dish. Sprinkle with water.

    Step 4

  • Microwave on HIGH for 3 minutes, or until the pepper is softened.

    Step 5

  • Combine beef, rice and quinoa, tomatoes, mozzarella cheese and basil, if using, in a small bowl. Stuff mixture into prepared bell pepper halves.

    Step 6

  • Microwave on HIGH for 1-2 minutes, or until heated through.

    Step 7

  • Top pepper with Parmesan cheese, if using.

    Recipe Tip

    To make this recipe ahead of time, complete Steps 1-5, then refrigerate pepper. When it’s time to eat, proceed with Steps 6 and 7.
