Step 1
Prepare rice according to package directions. Spread out on a pan to cool completely.
Step 2
Meanwhile, heat oil in a large wok or skillet over medium-high heat. Add the garlic, shallots and sambal oelek to the pan and cook, stirring, for 1 minute.
Step 3
Add the carrots and chicken to the pan and stir well to combine. Cook for 4-5 minutes or until chicken begins to brown.
Step 4
Add rice, kecap manis and soy sauce and mix gently to combine. Continue to cook for 3-4 minutes, until rice is heated through.
Step 5
Serve garnished with bean sprouts, cilantro and green onion.
