Step 1
Heat oil in a large saucepan over medium-high. Cook carrots, celery and onions for 5-7 minutes, or until starting to soften.
Step 2
Stir in broth and pepper. Bring to a boil.
Step 3
Add in broccoli and rice. Reduce heat to medium-low. Simmer for 10-15 minutes, or until vegetables soften, stirring frequently.
Step 4
Add soup, in batches, to a blender or food processor; cover. Blend until puréed.
Step 5
Return soup to saucepan. Add milk and cheese. Cook until heated through, stirring occasionally.
