Ingredients

  • 2 Minute® Sticky Rice Cups
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 2 boneless, skinless chicken thighs, diced
  • 1 tbsp vegetable oil
  • 1/2 cup chicken broth
  • 1 tbsp gochujang
  • Fresh cilantro (for garnish)
  • 1 tbsp sesame seeds (for garnish)
  • 1 red chili pepper, thinly sliced (optional garnish)

Instructions

  • Step 1
In a bowl, combine honey, soy sauce and garlic. Add chicken and be sure to fully coat the chicken. Allow to marinate for at least 30 minutes. (Refrigerate overnight for most flavor).

    Step 2
Heat rice according to package directions.

    Step 3
In a skillet, add chicken with marinade and heat over medium-high heat. Cook for about 5-7 minutes until the chicken is cooked through.

    Step 4
In a small saucepan, add chicken broth and gochujang. Whisk to fully combine. Bring to a simmer.

    Step 5
Divide rice between two bowls. Place chicken on top of the rice, then pour broth around the rice.

    Step 6
Garnish with cilantro, sesame seeds and chili pepper (if using).

If your usual weeknight dinner rotation is starting to feel a little too predictable, this bowl changes things fast. Juicy chicken thighs soak up a sweet-and-savory garlic marinade, then get piled over perfectly sticky rice sitting in a warm, rich gochujang broth that tastes like way more effort than it actually took.

It’s the kind of meal that feels like a restaurant reset in the middle of the week—bold flavor, cozy energy and almost zero stress. In about 15 minutes (plus a little marinating time), you get all the comforting depth of a slow-simmered ramen bowl without spending your entire night in the kitchen.

Creative Ways to Serve Your Rice Bowl

This dish is incredibly versatile, so feel free to play with how you serve it up:

  • Make it a Noodle-Style Soup: Pour the warm gochujang broth directly over the rice and chicken to create a deeply comforting, porridge-style savory rice soup.
  • Keep it Extra Saucy: Skip the separate saucepan and whisk the gochujang right into the skillet with your chicken and marinade during the last two minutes of cooking to create a thick, glossy, sweet-and-spicy glaze.
  • Add a Soft-Boiled Egg: Top your finished bowl with a jammy, soft-boiled egg or a fried egg to add an extra layer of rich flavor.

Minute Rice Pro Tips

The Perfect Prep: This is an elite meal prep move. Toss the chicken in the honey, soy sauce and garlic marinade the night before and let the fridge do the work. Bigger flavor the next day, less effort when you’re hungry. Boss Move.

Want to make it go further? If you need to feed a larger crew, easily bulk up this recipe by tossing a handful of fresh baby spinach, sliced mushrooms or tender bok choy right into the simmering broth before serving to stretch the portions even further.

No chicken? No problem! This bowl works perfectly any day of the week, making it easy to use whatever you have on hand. Feel free to swap the protein for cubed firm tofu, thin slices of pork or juicy sautéed shrimp. No matter how you mix it up, you’ll end up with a quick, sweet-and-spicy and seriously delicious bowl that hits the spot every single time.

Honey Soy Chicken with Gochujang Brothy Rice FAQs

What can I use if I don’t have gochujang?

Gochujang has a unique sweet, savory and smoky flavor, but if you don’t have it on hand, you can swap it for a mix of Sriracha and a tiny pinch of brown sugar, or use a splash of chili garlic sauce in your broth instead.

Is gochujang hotter than sriracha?

Not in general. Gochujang tends to have a deeper, slower heat, while sriracha is sharper and more immediate. Gochujang is also thicker and slightly sweet with a rich, savory flavor from fermented peppers and rice.

Sriracha brings more straight heat and garlic flavor, while gochujang adds warmth, sweetness and depth—especially in broths, marinades and rice bowls like this one.

What are the ingredients in gochujang?

Traditional gochujang is made with Korean red chili pepper flakes, fermented soybeans, glutinous rice and salt. The fermentation process gives it its signature balance of sweet heat, savory depth and rich umami flavor.

Some store-bought versions may also include sweeteners, garlic or preservatives, depending on the brand.

Can I use white jasmine rice instead of sticky rice?

Absolutely! While our Minute Sticky Rice gives this bowl a great authentic texture that holds up beautifully against the broth, our standard Jasmine Rice or Jasmine & Red Rice Cups work wonderfully too.

How spicy is this recipe?

As written, the broth has a mild-to-medium warmth because gochujang is more savory and sweet than it is purely hot. If you want to keep it extra mild, reduce the gochujang to half a tablespoon—or if you love the heat, load up on those fresh sliced red chili peppers at the end!
