Ingredients

  • 1 1/2 cups Minute® White Rice
  • 1 pkg (14 oz) flaked sweetened coconut
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (8 oz) crushed pineapple, drained
  • 1/2 cup semi-sweet chocolate chips
  • 1/3 cup all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • nonstick cooking spray

Instructions

  • Our Coconut Pineapple Clusters feature a tropical mixture of coconut, pineapple, creamy rice and delectable chocolate chips. It’s a sweet combo the whole family is sure to love!

    Step 1

  • Preheat oven to 350°F.

    Step 2

  • Prepare rice according to package directions. Cool completely.

    Step 3

  • Stir together rice, coconut, condensed milk, pineapple, chocolate chips, flour, lemon juice, lemon zest, vanilla extract, baking powder and salt in a large bowl.

    Step 4

  • Line a baking sheet with parchment paper, then coat with nonstick cooking spray. Drop mixture by heaping tablespoonfuls onto baking sheet. Bake for 15-20 minutes, or until golden brown. 

     Step 5

  • Cool cookies on baking sheet for 5 minutes. Remove to wire racks and cool completely.

    Recipe Tip

    If you have one, use an ice cream scoop to portion out cookies. They’ll be more evenly-sized and will have a more uniform shape.
