Ingredients

  • 1 Minute® Sticky Rice Cup
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1 tbsp coconut milk
  • 2 pieces of fruit leather (flavor of your choice)
  • 4 fresh strawberries, diced
  • ¼ cup dark chocolate

Instructions

  • Step 1

  • Prepare rice according to package directions. Allow to cool.

    Step 2

  • In a small bowl, combine sugar, vanilla, and coconut milk. Mix until sugar dissolves. Pour over cooled rice until rice is evenly coated. 

    Step 3

  • Lay a sheet of plastic wrap on a clean flat surface or a sushi roller can be used. Spread a thin layer of rice, leaving a small border at the top. Place fruit leather on rice and place fruit on top. 

    Step 4

  • Gently roll the sushi tightly using the plastic wrap. Apply a little pressure to make sure to maintain the shape. Twist the ends of the plastic to secure the roll.  Repeat the process if there is any rice left.

    Step 5

  • Place in the refrigerator for 30 minutes allowing the roll to harden.

    Step 6

  • In a small bowl, heat the chocolate in a microwave for 30 seconds or until completely melted.

    Step 7

  • Remove from plastic wrap and cut into bite size pieces. Drizzle with melted chocolate. Serve immediately.
