Ingredients

  • 1 Minute® Jalapeño Rice Cup
  • 2-4 jumbo shrimp, peeled and deveined
  • 2 tbsp olive oil, divided
  • 1/2 tbsp chili powder
  • 1/2 tsp garlic powder
  • 1 tbsp fresh lime juice
  • 2 tsp salt, divided
  • 2 tbsp avocado salsa, store-bought or homemade (see recipe tip)
  • Cilantro (optional garnish)
  • Lime wedges (optional garnish)

Instructions

  • Step 1
    In a bowl, combine shrimp, olive oil, chili powder, garlic powder, lime juice and salt. Toss to coat and let marinate for about 15 minutes.

    Step 2
    Heat rice according to package directions.

    Step 3
    Heat remaining olive oil in a skillet over medium-high heat. Add the shrimp and cook for 3 minutes on each side until they are pink and opaque.

    Step 4
    Top rice with shrimp and spoon the avocado salsa on the side.

    Step 5
    If desired, garnish with cilantro and lime wedges.
