Step 1
Chicken Meatballs: Preheat oven to 425°F.

In medium bowl, stir together chicken, chili powder and garlic salt. Roll into 1-inch balls and arrange on parchment paper–lined baking sheet.

Bake for 15 to 18 minutes or until golden brown and cooked through.

Meanwhile, in medium saucepan set over medium heat, melt butter. Cook celery and half the green onions, stirring occasionally, for 3 to 5 minutes or until starting to soften. Stir in chicken broth and ¼ cup Buffalo sauce; bring to a boil.

Add rice; stir, cover and remove from heat. Let rest for 5 minutes or until liquid is absorbed, then fluff with a fork.
Step 6
Serve meatballs over rice. Drizzle with remaining Buffalo sauce and blue cheese sauce. Garnish with remaining green onions.
