  • 2 cups sliced strawberries
  • 1/2 cup (6 oz) mini mozzarella balls
  • 4 cups arugula
  • 1/3 cup thinly sliced fresh basil
  • 2 tbsp chopped walnuts, toasted

Instructions

  • This colorful salad is not only refreshingly delicious, it’s also incredibly easy to make using rotisserie-style cooked chicken and a simple balsamic vinaigrette.

    Step 1

  • Prepare rice according to package directions. Cool completely.

    Step 2

  • Meanwhile, whisk together oil, balsamic vinegar, honey, thyme, salt and pepper in a large bowl. Add cooled rice, chicken, strawberries and mini mozzarella balls. Toss gently.

    Step 3

  • Stir in arugula, basil and walnuts.
