Ingredients

  • 1 Minute® Jalapeño Rice Cup
  • 1/4 cup diced onions
  • 1/2 teaspoon cumin
  • 1/2 cup Mexican cheese blend, shredded
  • 1 egg, beaten
  • 1/2 cup breadcrumbs
  • Cooking spray

Instructions

    Step 1

  • Preheat air fryer to 375°F. Heat rice according to package directions. 

    Step 2

  • In a large mixing bowl, combine the rice, diced onions, cumin, and Mexican cheese blend. Mix well. 

    Step 3

  • Add the beaten egg to the rice mixture and stir until it is fully combined. 

    Step 4

  • Take about 2 tablespoons of the rice mixture and shape into a ball using your hands. Repeat this process until all the mixture is used. 

    Step 5

  • Roll each rice ball in the breadcrumbs, ensuring they are fully coated. 

    Step 6

  • Lightly coat air fryer basket with cooking spray to prevent sticking. 

    Step 7

  • Once the air fryer is preheated, place the rice bites in a single layer in the basket, leaving space between each one for even cooking. It may take a few batches to cook them all. Spray the tops of each ball with cooking spray to help with browning. 

    Step 8

  • Cook for 15 minutes or until golden brown and crisp, flipping halfway through for even browning. 

    Step 9

  • Allow to cool slightly and serve.
