Don’t let the ease of this tostada recipe fool you. This dish might be ready in minutes, but it definitely doesn’t skimp on flavor! Traditionally from Mexico, tostadas are meant to be a quick and easy meal you can enjoy any time of the day. Starting with a baked, crispy tortilla, this meal gets more and more exciting as you layer it with your favorite toppings. The best part? The topping options are almost endless, which is why tostadas are such a fun and delicious meal. Nonetheless, there is one ingredient that, to us, is an absolute staple for an excellent tostada; the fluffy, delicious rice!
This recipe for veggie tostadas with black beans calls for Minute® Instant White Rice. These light and fluffy grains can be prepared on the stovetop or in a microwave and take about 5 minutes to cook to perfection. Bake the tortillas while cooking the rice and when the rice is done, mix it with the beans and taco seasoning. It’s as simple as that! Keep the grains warm and start layering the toppings over the crispy and slightly browned tortillas.
If you want to add this recipe to your weekly meal-prep here’s our advice: cook the rice and beans in advance and store them in the fridge in an airtight container until you’re ready to eat. Or, make this a no-cook recipe by using one of our Ready To Serve Rice cups.
Going with the no-cook option? Awesome! Grab your lunchbox and pack a cup of Minute® Ready to Serve White Rice, or try our flavorful Cilantro & Lime Jasmine Rice. Use canned beans to save even more time and pack the remaining toppings in separate containers. Replace the taco seasoning with your favorite salsa and you’re good to go. Microwave the rice cup at lunchtime and enjoy a quality meal in a matter of seconds.
