Ingredients

  • 1 can (20 oz) pineapple chunks, drained, juice reserved
  • 1 bag Minute® Rice & Quinoa
  • 1/4 cup canola oil
  • 2 tbsp ponzu sauce
  • 1 tbsp rice vinegar
  • 1 1/2 tsp honey
  • 1 tsp fresh grated ginger
  • 2 pkg (12 oz, each) cooked chicken breast strips
  • 2 bags (5 oz, each) baby kale

Instructions

    Step 1

  • Measure out 2 tablespoons of pineapple juice and set aside.
