Ingredients

  • 1 tbsp olive oil
  • 1 lb lamb shoulder, cut into 1-inch cubes
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 2 cups vegetable broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup Minute® Instant Basmati rice

Instructions

  • Step 1

  • Heat oil in the bottom of a pressure cooker, like an Instant Pot®, over medium-high heat. Brown the lamb cubes on all sides. Remove and set aside. 

    Step 2

  • In the same pot, add the onion. Sauté for 2 minutes. 

    Step 3

  • Return the lamb to the pot. Add vegetable broth, tomatoes, carrots, cumin, coriander, salt, and pepper. 

    Step 4

  • Close the lid and secure the pressure regulator. Pressure cook for 35 minutes. Once the cooking time is up, let the pressure release naturally for about 10 minutes, then carefully switch the valve to venting to release any remaining pressure. 

    Step 5

  • Prepare rice according to package directions. 

    Step 6

  • Open the lid, stir cooked rice into the stew, and adjust seasoning if necessary.
