Ingredients

  • 1 tbsp olive oil
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 cup celery, chopped
  • 1 can crushed tomatoes
  • 2 cups rotisserie cooked chicken, chopped
  • 1 pkg (14 oz) smoked sausage, cut into 1/2-inch pieces
  • 1 tbsp Cajun seasoning
  • 2 cups chicken broth
  • 2 cups Minute Premium Rice

  • Step 1

  • In a large pot, heat oil over medium heat. Add the bell pepper, onion, and celery. Sauté for about 5 minutes until the vegetables are softened.
