Ingredients

  • 1 whole chicken (about 3 lb), cut into 8 pieces
  • 2 tbsp adobo seasoning
  • 1/2 cup zesty Italian dressing, divided
  • 1/2 cup stuffed green olives, chopped
  • 1/2 cup white vinegar or lime juice
  • 1/4 cup capers
  • 1 onion, sliced
  • 6 garlic cloves, minced
  • 1 bay leaf
  • 2 cups Minute® White Rice

Instructions

  • This incredibly tasty Caribbean Chicken dish has a unique combination of zesty ingredients and savory seasonings, like adobo. Serve this chicken over a fluffy bed of Minute® Instant White Rice and enjoy a tasty and complete meal tonight.

  • Step 1

  • Rub chicken with adobo seasoning. Heat 1/4 cup of dressing in a large skillet over medium-high heat.

    Step 2

  • Add chicken and cook for 7-10 minutes, or until lightly browned, turning occasionally.

    Step 3

  • Remove chicken from skillet and cover to keep warm. Drain and wipe out skillet with paper towels.

    Step 4

  • Add remaining dressing, olives, vinegar, capers, onions, garlic and bay leaf to skillet. Bring to a boil, and cook, stirring, for 3 minutes.

    Step 5

  • Reduce heat to medium-low. Return chicken to skillet and cover. Simmer for 45 minutes, or until chicken is tender and cooked through.

    Step 6

  • When the chicken is almost ready, prepare rice according to package directions.

    Step 7

  • Spoon chicken and sauce over rice.

Add a Dash of Adobo

To start this recipe, make sure to season your chicken with the adobo seasoning to get the flavors going!

Don’t have adobo? You can make something similar from a simple combination of ingredients you probably have on hand. To make adobo seasoning, simply mix together 1 tablespoon of each of the following; garlic powder, onion powder, dried oregano leaves and pepper. Then add a 1/2 teaspoon of salt. Make a double batch and store it in an empty spice container to use next time. Adobo is a great seasoning mix to use on all kinds of meat or fish.
