Ingredients

  • 1 Minute® Yellow Rice Cup
  • 1 (4-6oz) catfish fillet
  • 1 tsp Cajun seasoning
  • 1/2 tsp black pepper
  • 2 tbsp olive oil, divided
  • 1/4 small onion, diced
  • 1/4 green bell pepper, sliced
  • 1/4 stalk celery, diced
  • 1/2 cup coleslaw mix
  • 2 tbsp remoulade sauce, divided
  • 1 large flour tortilla

Instructions

  • Step 1 – Season the catfish fillet with Cajun seasoning, salt, and pepper on both sides. Heat olive oil in a small skillet over medium heat. Cook the catfish fillet for about 5 minutes on each side, or until fully cooked and flaky. Remove from the skillet and set aside. 

     Step 2  – In the same skillet, add the remaining olive oil. Add the onion, bell pepper, and celery. Sauté for about 5 minutes, or until the vegetables are tender. Remove from heat. 

    Step 3 – Heat the rice according to package directions. 

    Step 4 – In a small bowl, mix the coleslaw mix with a tablespoon of remoulade sauce. Adjust to taste. 

    Step 5 – Wrap the tortilla in paper towels and microwave on HIGH for 15 seconds, or until warm. Place the sautéed vegetables in the center of the tortilla. Flake the cooked catfish on top of the vegetables. Add the coleslaw mixture and drizzle with the remaining remoulade sauce, and roll up.
