Ingredients

  • 1 tbsp olive oil
  • 1 lb beef chuck, cut into 1-inch cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • 2 carrots, sliced
  • 4 cups beef broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup Minute® Instant White rice
  • Fresh parsley, for garnish

Instructions

  • For a classic, comforting dish, try this Beef Stew with Rice. Bursting with tender beef and hearty vegetables, it’s a satisfying meal that’s perfect for any night of the week.

    Step 1

  • Heat oil in the bottom of a pressure cooker, like an Instant Pot®, over medium-high heat. Brown the beef cubes on all sides. Remove and set aside. 

    Step 2

  • In the same pot, add the onion and garlic. Sauté for about 2 minutes.

  • Return the beef to the pot. Add the potatoes, carrots, and beef broth. Season with salt and peppe

    Step 4

  • Close the lid and set the valve to sealing. Select “Pressure Cook” (or “Manual”) and set the timer for 35 minutes. Once the cooking time is up, let the pressure release naturally for about 10 minutes, then carefully switch the valve to venting to release any remaining pressure. 

    Step 5

  • Prepare rice according to package directions.

  • Open the lid, stir cooked rice into the stew, and adjust seasoning if necessary. Garnish with parsley.
