Ingredients

  • 1/4 cup sugar
  • 3/4 tsp cinnamon, divided

Instructions

  • Step 1

    In a small saucepan, combine coconut milk, 1/4 cup apples, sugar, 1/2 tsp cinnamon, and salt.

    Step 2 

    Bring to a boil. Add rice, stir, cover, and remove from heat. Let stand for 5 minutes.

    Step 3

    Return pan to stovetop and bring mixture back to a boil. Reduce heat and simmer for 5 minutes.

    Step 4

    Stir in vanilla extract and top with remaining apple and sprinkle with remaining cinnamon, if desired.
