For this (nearly) one-pan dish, the vegetables and chicken cook together. Stir-fry the ingredients in the pan so the heat distributes evenly. Continue to cook for about 5 minutes until the ingredients are slightly caramelized. For softer vegetables, add a bit of water to the pan to steam them. We recommend using vegetables like broccoli, bell peppers, mushrooms and carrots. Feel free to add frozen veggies or to use up leftovers from another night.
For this recipe, you can use grilled chicken breast strips from the store or you can marinate your own thin chicken strips in teriyaki sauce. Cook them in a pan before adding to the stir-fry.
To turn up the heat on your chicken and rice stir-fry, add in some spicy peppers, hot sauce or chilies. Adding one of these at the beginning of the cooking process — in this case, along with the vegetables — distributes their flavors throughout the dish. If you’re a fan of using egg in fried rice or stir-fries, crack in 2 eggs and stir after the chicken and sauce have been added. You might also want to try making our Microwave Egg Fried Rice.
