Shrimp and Rice Stuffed Avocado

Ingredients

  • 1 cup Minute® Ready to Serve Cilantro & Lime Jasmine Rice
  • 3 oz frozen cooked baby shrimp, thawed and drained well
  • 1/4 cup diced cucumber
  • 2 tbsp Italian dressing
  • 1 green onion, thinly sliced
  • 1/4 tsp Old Bay® seasoning
  • 3 ripe avocados, halved and pitted

Instructions

  • Heat rice according to package directions. Let cool completely.

  • In medium bowl, toss together rice, shrimp, cucumber, dressing, green onion and Old Bay seasoning.

  • Scoop out pulp of avocados, leaving 1/2-inch border all around. Chop pulp; stir into rice mixture. Divide filling evenly among avocado halves.
