Ingredients

  • 1 bag Minute® Rice and Quinoa, uncooked
  • 1 cup vegetable broth
  • 1 cup Cooked chicken breast, diced
  • 1/3 cup celery, Sliced
  • 1/3 cup carrot, Sliced
  • 1/3 cup red bell pepper, seeded and Sliced
  • 1/3 cup citrus vinaigrette
  • lettuce leaves

Instructions

  • Prepare Rice and Quinoa according to package directions, substituting broth for water. Cool.

  • In a medium bowl, Combine chicken, celery, carrots, bell pepper and vinaigrette. Mix well.

  • Fold in Rice and Quinoa.

  • Serve on lettuce leaves.
