Ingredients

  • 1 lb boneless, skinless chicken breast
  • salt and pepper to taste
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp parsley
  • 1 shallot diced
  • 2 cups low-sodium chicken broth
  • 1 cup carrots, diced
  • 1/2 cup peas
  • 1 1/2 cups Minute® Jasmine Rice
  • 1 lb boneless, skinless chicken breast

  • 1/4 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/2 tsp parsley
  • 1 shallot diced
  • 2 cups chicken broth
  • 1 cup diced carrots
  • 1/2 cup peas
  • 1 1/2 cups Minute® Jasmine Rice

Instructions

  • Need some inspiration for dinner? This Instant Pot Cajun Seasoned Chicken and Rice made with Minute® Instant Jasmine Rice is a tasty meal. This delicious recipe was created by Megan Olson (Skinny Fitalicious) for Minute® Rice.

    Step 1

  • Add the whole chicken breasts to the Instant Pot. Sprinkle with salt, pepper, paprika, cayenne, garlic powder, oregano, parsley. Add the diced shallot and chicken broth to the pot.

    Step 2

  • Cover with the lid of the Instant Pot and set to steam or pressure cook for 25 minutes. Set the valve to sealing.

    Step 3

  • Manually release the valve after 25 minutes to let the steam out then remove the lid.

    Step 4

  • Using two forks, shred the chicken breast. It will shred easily from the steam.

    Step 5

  • To the Instant Pot, add the carrots, peas and rice. Cover with the lid of the Instant Pot again and set to steam or pressure cook for 3 minutes. Set valve to sealing.

    Step 6

  • Manually release the valve after 3 minutes to let the steam out, then remove the lid. Stir the ingredients together and serve.

Prep Time

For this recipe, use fresh or thawed, frozen chicken breasts from your freezer. You can also use fresh or frozen peas and carrots, if you choose. Although our other rice varieties can be used, jasmine rice is an aromatic long grain rice that stays separate when cooked rather than clumping together.
