These savory Asian Salmon Rice Bowls with jasmine rice are made with a delicious, homemade sauce of ginger, soy sauce, maple syrup and lime juice.

  • 3 tbsp extra virgin olive oil, divided
  • 1 tsp minced ginger
  • 4 tbsp gluten-free soy sauce
  • 4 tbsp maple syrup
  • 2 tbsp lime juice (about 1 lime)
  • 1 1/2 tsp cornstarch
  • 1 1/2 tsp water
  • nonstick cooking spray
  • 1 lb salmon, cut into 4 fillets, skin removed
  • 2 cups Minute® Jasmine Rice
  • 10 oz fresh spinach
  • 1 tbsp toasted sesame seeds

    Step 1

  • Preheat oven to 400° F.

    Step 2

  • In a small saucepan, heat 1 tablespoon olive oil over medium heat.

    Step 3

  • When oil starts to shimmer, add ginger and sauté for 1 minute.

    Step 4

  • Add soy sauce, maple syrup and lime juice. Cook until sauce starts to bubble.

    Step 5

  • Mix together cornstarch and water, pour into sauce and stir until thickened (about 3-4 minutes). Set aside.

    Step 6

  • Spray a baking pan with nonstick cooking spray. Place salmon fillets on baking pan. Pour a spoonful of sauce over each piece of salmon and save the remaining sauce to top the salmon with after it’s cooked.

    Step 7

  • Bake salmon for 15 minutes.

    Step 8

  • During the last 5 minutes of cooking time, prepare the Minute® Instant Jasmine Rice as directed on package.

    Step 9

  • In a large frying pan, heat remaining olive oil over medium-high heat. Add spinach and sauté over for 3-4 minutes, or until it starts to look wilted.

    Step 10

  • Place spinach in each bowl, top with Minute® Instant Jasmine Rice and salmon. Pour a spoonful of reserved sauce over each piece of salmon. Sprinkle with toasted sesame seeds. Serve immediately.
